Vanilla Cashew Cream
1 1/2 cup cashews (soaked overnight)
1/3 cup coconut oil, melted
2-3 Tblsp water
1/4 cup coconut nectar
Seeds of 1 vanilla bean
2 Tblsp lemon juice
1/4 tsp salt
1. Add all ingredients to a blender, except the lecithin, and blend well
2. Use as icing for cake or - particularly carrot cake - and devour!
Optional: Garnish with grated lemon rind for extra bite and decoration.
