Lemon Bliss Balls

1 cup activated cashews or macadamia nuts
1 cup dried coconut
1 -1¼ cup chopped fresh Medjool dates
Half a vanilla pod (beans only)
Pinch of salt
10 drops of Doterra lemon essential oil
Zest of 1-2 lemons and juice of half lemon
Extra coconut to coat bliss balls

1. Process all ingredients, except dates, in a food processor 
until desired consistency
2. Gradually add dates as ingredients are processing
3. When mixture clumps together and stays together in a ball you're set!
4. Transfer to a bowl and mix in lemon rind by hand
5. Roll into approx. 20 equal sized balls and coat in coconut 
6. Set in the fridge for 2-3 hours

Store in the fridge or freeze to keep longer.

To make these bliss balls with less sugar content, replace half of the dates with 1/4 cup tahini and 1 Tablespoon melted coconut oil
