4 cups cauliflower rice (directions below to make cauliflower rice)
1 cup diced tomato
1 cup diced cucumber
1 cup finely chopped parsley
1/4 cup finely diced red onion
1/4 cup olive oil olive oil
1/3 cup lemon juice
Salt to taste
1. Combine all ingredients and dress with lemon, olive oil and salt.
To make your own cauliflower rice:
1. Chop cauliflower into florets.
2. Grate cauliflower florets OR pulse florets in a food processor until desired 'rice-like' size, scraping down the sides occasionally.
NOTE: If using a food processor, be careful not to over process and turn the cauliflower into mush!
