Berry Bliss Balls

1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1 cup dried coconut
2 cups organic dried cranberries
Seeds of half a vanilla bean or drop of vanilla extract
Pinch of salt
Extra coconut for rolling

Method:

1. Process seeds and coconut in a food processor until you reach your desired consistency
(I prefer these bliss balls to be smooth, so I process really well)
2. Cover cranberries in some boiling water for a second and then drain well
(this softens them so they bind the ingredients together without using too many cranberries)
3. Add vanilla seeds or a drop of vanilla extract and a pinch of salt and process quickly
4. As the machine is running, gradually add the cranberries and process until it comes together
5. Roll into approximately 30 bliss balls and coat in extra coconut or leave naked!
6. Set in the fridge for 1-2 hours

Store in the fridge or freeze for a later date!
